The typical properties of rice ingredients enable more and more food manufactures to create delicate textures that are not only attractive but also very stable. This is due to the unique characteristics of rice starch.
First of all, rice starch is characterised by very small starch granules in the range of 2-8 µm. This is much smaller than the starch granules of other crops such as corn and potato. The rice starch granule size is comparable to the size of fat globules, and is therefore ideally suited to mimic a full bodied fatty mouth feel. Rice starch can not only improve the creaminess of your food products, but can also serve as a natural fat replacer.
Due to its very small starch granule size, rice starch is also appropriate for applications where filmy textures are needed, such as the coatings of confectionery products, and impregnation of mushrooms and poultry.
